After completing my professional training in PR and Communication, I worked for many years in various countries around the world as PR and Communication Specialist for international corporations.
In 2007 my family and I moved from Denmark to the USA. It was probably around 2008 when I started feeling bad. I suffered from chronic headaches, all-over body aches, rashes and my energy levels were on ground zero. This is where the odyssey seeing one doctor and specialist after the next began. I was diagnosed with so many illnesses and was offered so many drugs that I cannot remember their names. Drugs have never been my go-to solution; therefore, I began step by step determining what could be wrong with me. I picked one doctor’s conclusion and it was my dermatologist’s. She diagnosed after several food allergy blood tests that I had far too much histamine in my body.
Food journaling was the first thing I started doing. Nothing extensive or fancy just some scribbles a day about what and where I ate. Soon I noticed that when I ate out, especially at Asian restaurants I felt worse. A quick internet research brought me to “The Chinese Restaurant Syndrome” and for the first time I read about the dangers of MSG to our health and body. Immediately I went through my pantry and eliminated every item labeled with MSG. Stopped buying foods or products clearly labeled containing MSG.

Sure, enough I did not eat at those Asian restaurants anymore. I started to feel a little better but was not completely satisfied with those results. I dug deeper and deeper into MSG related health issues on my journey to recovery and found many other food ingredients which are actually MSG but had nicer names but were still a neurotoxic poison for my body. This was a very eye-opening moment for me. Cooking from scratch and always fresh was what I did from then onwards. It did not take long, and I felt better. I could ditch the pain killers; my energy levels came back, and I felt great again.

I am also a chef and eventually took the plunge by starting my own business in California in 2010 creating and selling gluten-free and organic spice blends. The recipes came from our family’s butcher's shop, which had been handed down father to son for over 145 years.

I promoted my products at gluten-free trade fairs and events nationwide with live cooking demonstrations. In this process I was able to help my customers to easily create healthy and nourishing meals for themselves and their families.
To deepen my knowledge and to get closer to my goal as a Holistic Nutritionist, I completed a certified Master Nutritionist course at The Nutritious Life Studio in New York. I am a board-certified holistic nutritionist and member of the American Association of Drugless Practitioners.

I’m an Access Bar’s Practitioner, Life Coach and also a Sylvotherapy Practitioner. Working with my clients I often use neurographic techniques which can very quickly help nailing down restrictive thougths or emotions. I love what I do and I like to help my clients to find their optimal health and lifestyle to create a better quality of life through a balanced holistic approach.
When I am not with clients you can find me walking my dogs, digging, and planting in my vegetable garden, developing new recipes, or just simply forest bathing.
